New Recipe: Sweet Potato Pork Quesadillas

This may not sound like a great quesadilla but it was overwhelmingly GREAT and quick.  Start by putting the potato in the mic, cook the ground pork and mix the filling then stuff the tortilla.  Don't add to much cheese because the pork filling is so good you want to be able to taste it and too much cheese can overwhelm the flavor of the filling.  The original recipe came from my Food Network magazine.  When I went to look it up on line to get the link, I found that another person also changed up the spices like I did.

SWEET POTATO PORK QUESADILLAS
1 C jack cheese, shredded
1 C. cheddar cheese, shredded
8 burrito-size flour tortillas
Filling:
2 T. unsalted butter
1 lb. ground pork
1 t. chile powder
½ t. chipotle powder
½ t. salt
2 cloves garlic, minced
1 bunch green onions, chopped
1 medium sweet potato, baked
½ C. fresh cilantro, chopped

Pierce sweet potato a few times with a fork and microwave until soft about 10 minutes. Let cool, cut in half, cube pulp with a knife inside skin, scoop out pulp and toss skin. Heat ½ tablespoon butter in a large nonstick skillet over medium heat. Add the pork, chile powder, chipotle and salt, cook, breaking up the meat, until browned, about 3 minutes. Add the garlic and scallions, cook, stirring, 2 more minutes. Add the sweet potato and cilantro, cook another 2 minutes to warm potatoes. Taste, if more salt is needed add a sprinkle.

Spray fry pan with non-stick spray (or a dab of butter).  In fry pan, layer tortilla with cheese, filling, cheese and top with another tortilla.  Spray tortilla on top with oil (or spread with butter).  Fry till golden, about 2-5 minutes per side.  Let rest 2 minutes before you cut into triangles.  Makes 2 quesadillas.
