Quick and Easy Irrestible Candy

I first heard about this recipe on the radio 101.3fm and then most recently on Food Network's, Tricia Yearwood show so I decided to give it a try.  It has been called Cracker Candy and Sweet & Saltines.  Tricia mentioned it is like "crack" and I can see why.  It is very hard to resist, caramel, chocolate and a crisp cookie like crunch.  It was the easiest dessert I think I've ever made besides Dump Cake.  I'm calling it Christmas Crack.  I heard this name on TV and have been looking for a recipe to fill it's shoes.  This is it and since it is so "bad" (in a great way of course) I would only make it for Christmas or to give away.

CHRISTMAS CRACK
2 cubes butter
1 C. brown sugar
35-48 saltine crackers (1 pkg. + some)
16 oz. pkg. semi sweet chocolate chips

Preheat oven to 400°F. Line a large cookie sheet with heavy duty foil. Spray with non stick spray. Place crackers, salt side down on foil. The number of cracker will depend on the size of your cookie sheet (mine held 6 x 8 = 48 crackers). In a medium saucepan add butter and sugar. Melt, stirring constantly until all butter is absorbed into the sugar, mixture comes to a bubble and sugar is completely melted. Pour sugar mixture over crackers (some will seep under crackers, it is OK). Place in oven and bake 3-5 minutes until bubbly. Remove, sprinkle with chocolate chips. Let sit a few minutes until chips are spreadable. Spread chocolate evenly over crackers. Remove foil from pan and place in freezer for 10 minutes. Remove from freezer and break into pieces.
Note: If you want more uniform pieces, place on a cutting board and cut with a knife. Store in an airtight container in the refrigerator.
This picture is taken before I broke it up.  You can sort of tell when I froze it, it didn't freeze flat since it did not quite fit in my freezer but don't worry once you break it up you won't know the difference.  It tastes much better than it looks here.
