Felt like Summer...in our belly's that is

Last nights dinner reminded me of summer.  It was light, refreshing and bursting with flavor.  I made my marinated salmon (a recipe I got from a friend) in a grill pan and served it along side a new recipe from my Salad of the Day cookbook by Williams Sonoma.  The slaw recipe was similar to my Singapore Slaw and I added a couple of ingredients from my salad to this new Cabbage, Pear and Ginger Slaw, it was perfect.  I liked the fresh fruit with the spiciness from the Serrano.



CABBAGE PEAR AND GINGER SLAW
1/2 head cabbage, thinly sliced
2 pears, cored and sliced
1 mango, sliced
Dressing:
1 t. brown sugar
1 t. fresh grated ginger
1 t. soy sauce
4 T. rice vinegar
1 T. sesame oil
1 Serrano seeded and minced
Topping:
dry roasted peanuts
Fresh cilantro, torn

Combine dressing in a large bowl, whisk  Thinly slice all veggies.  To bowl add cabbage, pears and mango, toss. Cover and chill ready to serve.To serve, sprinkle with peanuts and cilantro.

Note:  If you plan on eating all the salad go ahead and add the cilantro to the bowl.  I don't like it getting soggy so if there will be leftovers I sprinkle it on top of my individual serving.
