BBQ'ed Goat Cheese Turkey Burgers

Tried a new recipe tonight for dinner and it was a winner.  BBQ'ed Goat Cheese Turkey Burgers with caramelized cranberry relish.  It made the cut and will be repeated.

Now that I'm getting to the point where I can say "I have mastered caramelized onions" I am using them more and more.  The key is to turn the flame to low, keep them covered and as they start to brown stir them and the brown color on some onions will begin to color the rest.  It's nice to do extra caramelized onions and store them in the refrigerator for you next weeknight meal.

If you haven't tried goat cheese you need to know it's a strong cheese, a bit tart but very creamy and not overpowering in these burgers.  It's a bit like cream cheese mixed with sour cream and Feta but it has a taste all it's own.  If you like Feta I would give goat cheese a try.

One of the herbs I have outside my kitchen window is thyme.  It comes back year after year and does well on the patio here in Northern California.

GOAT CHEESE TURKEY BURGERS
5 Earth Grains 100% Natural whole wheat thin buns
2 T.Dijoneese mustard
2 t. Worcestershire sauce
½ t. salt
½ t. coarse ground black pepper
2 t. thyme leaves (or 1/2 t. dried)
1 lb. ground turkey
½ C. (4 oz.) goat cheese, crumbled
Cranberry Onion relish:
1 T. oil
1-2 onion, sliced thin
½ C. dried cranberries
2 T. balsamic vinegar

In a large bowl, mix mustard, Worcestershire sauce, salt, pepper and thyme. Add turkey, mix. Add crumbled goat cheese, mix. Shape into 5 burgers, set aside in fridge. Slice onion and cook covered on low for about 10-20 minutes or until caramelized. Add cranberries, cook 5 minutes to blend flavors. Add balsamic and cook another 1-2 minutes.  Serve on burgers.
Oil grill. Heat gas BBQ to 250˚F, and grill for 20 minutes. Add buns to upper grill, flip burgers, grill another 5. Serve with baby spinach and the cranberry onion relish.

Note: The Earth Grain buns are thin so they only have 100 calories per bun. They don’t work well for juicy sandwiches that need a sturdy bun.  I am only cooking for one but if your serving all 5 then I would caramelize two onions.
