If your looking for a laugh on Easter I sent the best gift this year. I shipped my in laws an Ostrich egg from Rooster Cogburn in AZ to the in laws in PA. When they opened it they didn't know what to think. They were freaked out, laughed, it became the talk of the neighborhood and they said they would be saving it for my visit the following week.
An ostrich egg equals 24 regular eggs. They say it's sweater than a regular egg but in the fritatta I made I didn't notice a real difference except for the size and the cracking process. It was a bit time consuming to crack it because you need to poke a hole in the top with a chisel and hammer, break the yoke and then pour the egg out the small hole which will take a lot of shaking and some time.
