Goat Poppers

If you like goat cheese you will enjoy these.  They are a bit much calorie wise as a side dish but served for a party they would be great.  I made a half batch last night for dinner and although we ate them all I don't want to know how many calories we consumed.  I'll just remember the good pepper effect.

GOAT POPPERS
10 baby bell peppers (red, yellow or orange), cut in half, seeds and ribs removed
1 ( 11 oz.) log goat cheese
20 springs cilantro, chopped
½ t. pepper
½ t. garlic powder

Preheat oven to 350˚F. Slice peppers in half, lengthwise, cutting through stem. Clean removing seeds and ribs. Mix cheese, cilantro, pepper and garlic. Stuff peppers. Place closely on a cookie sheet and bake for 10 minutes. Serve.

Note: You can leave on stem but I prefer to slice off the end so I can eat the whole pepper and not have any waste. It does look slightly better to leave them on but then you need a place to toss the stems.
