This is one of my favorite freezer holiday staples. It is so nice to have something homemade in the freezer that I can just pop in the oven and bake for 20 minutes.
SAUSAGE CHEESE BALLS
2 pkg. (24 oz.) Jimmy Dean sausage (1 hot, 1 regular)
1 ½ C. biscuit baking mix or breadcrumbs
4 C. (16 oz.) sharp cheddar, shredded
½ C. onion, finely chopped
½ C. celery, finely chopped
½ t. garlic powder
Preheat oven to 400F. Mix all ingredients and form into 1 inch balls. Spray a cookie sheet with nonstick spray or use a stone pan. If you line the pan with foil, spray it with oil, they will stick. Bake 20 minutes. Makes 6 dozen.
Note: Freeze raw balls, individually separated. Once frozen place in a gallon zip top bag. Cook as above, no need to thaw.
Variations:
- For a firmer texture add an extra 3 C. baking mix and 2 C. cheddar.
- Dip: Mix ¼ C. Dijoneese mustard, ¼ C. apricot preserves. Can serve as is or heat and add ¼ C. balsamic vinegar.
- Holiday Flare: Add ⅔ cup peeled and grated tart apples instead of celery and onions plus 1 t. cinnamon.
