Taco Pizza

Some of my best meals come from desperation and whats available in the refrigerator.  Tonight's dinner was one of those.  I had taken out ground turkey to make this Scratch Hamburger Helper sort of  meal but the weather didn't comply and cool down as expected so a heavy meal didn't sound great.  I thought I could make my pear burgers but going outside to the grill didn't sound appealing either when it was nice and cool in the house.  Instead I decided to make Naan Pizzas with Taco meat and refrigerator clean out.  It was Thursday after all so cleaning out the fridge is a good idea since I don't cook on Friday date night.  Here's what I did.

TACO NAAN PIZZA

2 Naan breads
lb. ground turkey meat
1/2 onion, sliced
1 C. red bell pepper, sliced
2 T. homemade taco seasoning
4 frozen cubes of homemade pizza sauce, thawed
1 avocado, sliced
1 Roma tomato, sliced

Fry onion and bell peppers for about 10 minutes.  Add meat and taco seasoning and cook until meat is no longer pink.  Thaw pizza sauce in microwave.  Spread on Naan bread.  Top with meat mixture, mozzarella and cheddar.  Bake 400 for 10 minutes or until cheese is melted.  Top with sliced tomato and avocados once out of the oven.  Let cool 5 minutes.  Serve.

Note:  For the taco seasoning and pizza sauce recipes look under the label Let's Eat or search on the names.  You can always use packaged items here but I always have these on hand in the pantry or the freezer because when I make it I make enough to have more than I need.
