New Vegetable (for me that is)

I tried a new vegetable the other day, Cassava root.  My aunt made it and gave me a piece to try.  She peeled, boiled and ate it plain.  I'm going to look for it next time in the store.  It was a cross between a russet and a sweet potato.  Pretty good.  With butter and sour cream or she said with sugar it would be even better.  I'll also try it in recipe that calls for either parsnips or potatoes like in a stew or even roasting them.
